Happy Holidays!

I want to wish everyone a very Merry Christmas! I hope all of you are having a wonderful holiday season complete with plenty of good food, cheer, and loved ones. I’m here in Pittsburgh celebrating Christmas although yesterday I got to take a fun road trip to Cleveland where we toured the Christmas Story house (yes, the hilarious Christmas movie of the same name) and had a fabulous culinary experience at the famous Westside Market. Posts on both will be coming soon so stay tuned.

I’ve only celebrated Christmas abroad once (in central Mexico back in 2007), and while I love nothing more than waking up in my own bed on Christmas day, it’s an experience I wouldn’t mind having again one day.

I’ll leave you with this incredibly easy and delicious dessert recipe. I made this for my Christmas Eve feast. In case you have an upcoming holiday get together in which you need to bring something, bring this. Happy Holidays all!

Chocolate Cherry Cheesecake

1 jar (12 ounces) maraschino cherries
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
2 eggs
1/2 cup miniature semi-sweet chocolate chips
1 chocolate cookie crust (9 inches)

Drain maraschino cherries, reserving 2 teaspoons juice. Cut cherries into quarters; set aside. In a small mixing bowl, beat the cream cheese, sugar, and reserved cherry juice. Add eggs; beat just until combined. Fold in chocolate chips and reserved cherries. 

Pour into crust (crust will be full). Bake at 350 degrees for 30-35 minutes or until center is almost set. Cool in a wire rack.
