Kentucky Bourbon Baked Beans

Last week for dinner I made a bourbon meal themed meal. There were bourbon hot dogs, Vidalia onions that had been sauteed in, you guessed it, bourbon, and finally, bourbon baked beans.  At the Maker’s Mark gift shop I had come across a great cookbook in which every recipe uses bourbon. Although I had seen other cookbooks at other distillery gift shops, one centered entirely on bourbon seemed the most unique and fitting. 
The beans were terrific and simple to make since the recipe basically consists of you adding some additional ingredients to canned pork and beans. It’s a recipe I’ll try out for sure again. My only recommendation is to perhaps not use Wild Turkey’s 101 Proof bourbon-it was a bit strong. I’ll leave it at that! 

Kentucky Bourbon Baked Beans

6 strips bacon
1 (28-ounce) can pork and beans
1/3 cup Kentucky bourbon
1 large onion, chopped
1/4 cup brown sugar
1 tablespoon ketchup
1 teaspoon brown mustard
1 tablespoon lemon juice

Preheat the oven to 350 degrees F. Fry the bacon until cooked but not crisp and set it aside. Combine the beans, bourbon, onion, brown sugar, ketchup, mustard and lemon juice in a large ovenproof pot. Bake for 45 minutes or until warmed through. Top the beans with the bacon.
