Lemongrass Iced Tea-Thailand

This is perhaps the simplest thing I have ever made but also one of the most delicious. Although I am a soda drinker, I do from time to time order other beverages when out and so when I saw a recipe for an ice tea with lemongrass in my Easy Thai Cooking cookbook, I decided to give it a try.

The stalks of lemongrass are synonymous with Thai cuisine and they have a distinct citrus aroma that enhances Thai dishes from salads to hot curries and soups. The author of the cookbook notes that “Most commonly, the bottom 4-6 inches are used for infusing, mincing or slicing very thinly to shorten the tough fibers that run lengthwise. The outer tougher leaves must be stripped away, revealing the aromatic and tender inside.”

Lemongrass Iced Tea

Serves 4-6
Preparation time: 5 min
Cooking time: 20 min

8 whole stalks of lemongrass
8 cups water
1/2 cup sugar
1 tablespoon black tea or 2 black tea bags

-Simmer the lemongrass and water over low heat for 20 minutes.

-Remove from the heat, stir in the sugar and tea and steep for 20 minutes.

-Strain, cool and chill in the refrigerator. Serve over crushed ice.

    That sounds really good! When I went to Thailand, I was made a similar drink with lemon grass but instead of mixing the boiled lemongrass water with tea, it was mixed with sprite and lime juice. When we made it, butterfly pea flowers were also boiled with the lemongrass which gave the drink a nice blue color. Then when the sprite is poured in the drink turns purple! It was really cool! a fun drink to have!

    The drink you had in Thailand sounds delicious! People often go on about new foods they try when traveling but I feel drinks can be equally worthy!
